The fir is the surprise

Balsam fir in the middle of a vanilla gourmand is not an obvious choice, and it is what keeps this from being cloying. Fir is resinous and cold; sitting between the warm brioche note above and the praline below, it cuts a line through the sweetness that vanilla and benzoin alone would never give.
