Khair Confection is Paris Corner's dessert — and unlike most gourmands, it names exactly what it is.

Pear and whipped cream open it: fruit and dairy together, which sets the register immediately. Cashmeran, jasmine and ylang-ylang hold the heart, the cashmeran adding a soft woody-musky warmth underneath the flowers so the sweetness has something to sit on. Marshmallow, vanilla and sandalwood close it — marshmallow being the note that gives the drydown its pillowy, powdered-sugar texture.
